After Saulo steps over and gets to the mount position on his opponent, he leans to the side at an angle with his hand posting on the mat, and swings his leg to an S position. With his S mount, he can put more pressure on his opponent and also has a better angle to attack the arm. If his opponent is able to defend the first arm, he has the leverage he needs to attack the second arm.

Next, he pulls the arm to him, extends his legs and pinches them together on the arm. To finish, he uses his other arm to make a "V" with his elbow on the wrist. Now he can lean toward the head to break the grip and finish.

Here he has many options to finish the choke, including using his free hand behind the neck, sitting back for the bow and arrow, or staying on the back and rolling through if his opponent rolls.

Immediately, Xande goes to the technical mount and grabs the cross collar with the thumb inside, and flattens him out. Because he didn't feel he had a great grip, Xande let go of the collar to open the other collar, and make a cross grip with his other hand. At this point, his opponent turned back on his side, so Xande moved around, placing his chest on the back. Next he reached his free hand over the head and opened the neck with his forearm to make his second collar grip. Now he could bring his forearm across the throat and go back to full mount to finish the choke.
